FARM-TO-FORK DINING: HOW APES HILL IS EMBRACING CULINARY SUSTAINABILITY
In recent years, sustainability has emerged as a cornerstone of the global hospitality industry. As travellers become more conscious of their environmental footprint, hotels and resorts are adapting their offerings to meet evolving expectations.
Sustainability is an integral part of the Apes Hill Barbados experience, blending luxury with ecological responsibility. With a commitment to organic farming practices underpinning its farm-to-fork initiative, Apes Hill aims to ensure that every meal is not just a feast for the senses, but a step towards environmental stewardship.
Known for its breathtaking views and luxury amenities, Apes Hill’s eco-conscious community is also making significant strides in sustainable and organic best practices. With 60 acres dedicated to organic farming, 40 beehives supporting pollination, and 17 acres of fruit trees, the land helps to sustain the community.
“Our Apes Hill ethos is built on a luxurious, yet sustainable lifestyle, where we infuse responsible practices into our endeavours to benefit our people, our planet and the local community,” explained Ed Paskins, golf course superintendent and sustainability expert.
“Sustainability touches every facet of our resort and community, including our food and beverage offerings. At Apes Hill, the commitment to environmental stewardship and healthy living goes hand in hand, creating a model that inspires our members and our guests.”
The unique sustainable food philosophy is predicated on a commitment to supporting local agriculture and reducing the resort’s environmental footprint, by sourcing ingredients directly from the organic farm on property and other trusted local producers.
Apes Hill’s farm-to-fork menus are designed around the seasonal availability of produce, ensuring that every dish is crafted with the freshest and most sustainable ingredients.
“Ultimately, we’re on a mission to provide fresh, healthy food while minimising environmental impact,” added Paskins.
“We’ve installed over 40 bee hives across our community, for example, which have provided several yields of organic honey, often used in our ice creams and other desserts at The Noisy Cricket Bar and Restaurant. Our focus on soil health also aids in our efforts to produce the healthiest crops including breadfruit, bananas, papaya, tomatoes, pineapple, cocoa, limes, mangoes, and a variety of herbs.”
Apes Hill is reducing the food miles of its dishes by sourcing locally to decrease the distance food travels from the farm to the table, resulting in fresher food and a smaller carbon footprint.
Other sustainable efforts at the resort include the exploration of eco-friendly farming techniques with natural pest controls and the creation of habitats for biodiversity to increase pollination of their plants.
Apes Hill also prioritises education and community involvement. Tours are offered to educate members and guests about the significance of the land, organic farming practices, and the benefits of organic food to the pursuit of wellness. By fostering a deeper connection to the land and its produce, Apes Hill encourages a culture of sustainability and health-conscious living.
Apes Hill Barbados exemplifies how luxury and sustainability can coexist harmoniously. Through innovative farm-to-fork practices with the ongoing development of the organic farm, Apes Hill is not only providing delicious, healthy food, but also paving the way for a greener, more sustainable future.
